I have been meaning to update this dead blog for a few days but things just kept coming up. We've been busy with school, visiting with friends and planning the last two field trips of this year as well as our summer vacation. Everyone is excited and anxious to finish the book work so we can move on to fun things like gardening, walking to the Farmer's Market and waiting for the big events we have planned for each summer month to roll around.

A friend gave me a recipe for a cake. She's wonderfully thoughtful and rushed the recipe to me because it contains no eggs! Perfect for Alyssa! It turns out to be a delicious and easy chocolate cake recipe that I fully intend to experiment with.

Here's the base recipe:

Double chocolate snack cake

1 2/3 c. flour
1 c. packed light brown sugar
1/4 c. cocoa
1 t. baking soda
1/4 t. salt
1 c. water
1/3 c. oil
1 t. vinegar
3/4 t. vanilla extract
1/2 c. chocolate chips

- Grease an 8x8 pan (I used a 10x7 pan). Preheat the oven to 350*.
- Combine dry ingredients. Add all other ingredients except chocolate chips.
- Mix well.
- Pour into pan and sprinkle chocolate chips over the top.
- Bake for 35-40 minutes.

SO good. I'm going to try omitting the cocoa and adding a little extra flour and vanilla for a white cake. Maybe some nutmeg and cinnamon for a spice cake? The possibilities are endless. :)

Is anyone else in love with Redbox? We aren't big enough movie watchers for a service like Netflix to be worth the money. But Redbox - totally my new best friend. Those big red machines found near the entrance of most grocery and big box stores contain tons of great movie titles - all for $1 a night. The best part? If you sign up at their website, you can get a free movie code sent to your cell phone every Monday. It's become a great reward for my girls. Those Monday doldrums are quickly swept away when I remind them that I have a free movie code.

So that's not much of an update but it's all I've got. We're just moving our way through a very blessed and full life. Enjoying it. Teaching our daughters to enjoy it. Enjoying watching them grow and learn to understand more of God. Enjoying watching the blessing of God faithfully work in the lives of those around us. Blessed. Full. Happy. That's about it!

  1. That recipe sounds great! Let me know if you can get a white cake out of it - I would love to try that version for my hubby as he does not like chocolate. (I know, how could I possibly be in love with a man who does not enjoy chocolate...lol)
    Also, when we do decide to get a movie, we have also found Redbox to be great! The price is the best of all as the movie rental places are a bit pricey at times. :)

    Daniel tells me I'm cheap because I won't even rent without the code, but there's just something REALLY awesome about "cheating the system" and getting a free movie rental! :)

    (By the way, Daniel told they just switched the code from Mondays to Wednesdays. Just so you know.)

  5. Thanks for the update and for the tip on Redbox. I have never used it, but did sign up for it. Thanks. As for your dead blog, I am hoping you don't discontinue it as of now it is the only way we have of hearing what is going on in your lives. (closed my facebook acct)
