I've been playing around with the Hillbilly Housewife basic muffin recipe, trying to make it a little healthier. Here's what I made this morning:
2 c. flour
1/4 c. oil
1 egg
1/3 c. honey (I used an overflowing 1/3 c. and they are very sweet.)
1/2 t. salt
1 T. baking powder
1/2 c. shredded coconut
1/3 c. wheat germ
Mix well. Add in a handful of chocolate chips or dried fruit - or both! Bake at 400* for 20 minutes. They are sweet enough to stand alone without jam or butter.
**You'll want to add a cup of milk also. That would probably help. **
