We needed a warm pick-me-up during school the other day. So I flipped through my handy dandy More With Less Cookbook. of course, I found a great recipe and they quickly pulled together into a yummy snack.
Cinnamon-topped Oatmeal Muffins
Preheat oven to 425*
Mix:
1 c. flour
1/4 c. sugar
3 t. baking powder
1/2 t. salt
Add in:
1 c. oats (I used old-fashioned but you can use quick oats)
1/2 c. raisins
3 T. oil
1 egg, beaten
1 c. milk
Stir just until all ingredients are moistened. Fill greased muffin tins 2/3 of the way full and sprinkle with cinnamon topping :
2T. sugar
2 t. flour
1 t. cinnamon
1 t. melted butter
Make for 15 minutes. Makes about a dozen muffins.
When I made the topping, it was more of a paste. It cooked down into the muffins rather than creating a crusty top
Ing but they were still delicious.
